National Lima Beans Respect Day

Happy National Lima Bean Respect Day, folks! I’m sure you are all super excited to talk about lima beans. For those of you confused by this, you either LOVE lima beans, or you have no idea what they are! So, to solve the mystery…

Lima beans are legumes, in which the seed from the plant is eaten like a vegetable. They are also known as butter beans! The domestication of lima bean originated in the Andean and Mesoamerican eras. There are both bush and pole varieties, in which the pods can be up to 15 cm long, and the beans are 1 to 3 cm long.

Fun Lima Bean Fact: One hectare of lima bean plants can yield approximately 3000-5000 kilograms of seeds! Now that’s a lot of lima beans!

So why should we respect these little legumes? Well, for their nutritional properties, of course! They have a high-quality protein and a good source of, my personal favourite, dietary fibre. They also help with keeping low blood sugar, and lowering cholesterol. And, there you have it, several good reasons to love lima beans! May you enjoy some today!
