National Sponge Cake Day


Today is National Sponge Cake Day…and like most cake related days, I’m not so excited about this one. But, let’s see what we can learn about sponge cake!

Sponge cake is “a cake based on flour (usually wheat flour), sugar, and eggs, sometimes leavened with baking powder which has a firm, yet well aerated structure, similar to a sea sponge.” Mmmm….sea sponge! Sponge cake is believed to be one of the first yeast-less cakes, originating in the early 1600s in England. Well, that’s about all I could conjure up about this fluffy little dessert!
